Couscous
INGREDIENTS
- 1 1/4 cup vegetable broth
- 1 cup couscous
- 2 TBSP lemon juice
- 3 TBSP olive oil
- salt and pepper to taste
- bunch of mint chopped
- 2 tomatoes - one tomato diced and the other sliced for garnish
- 1 cucumber diced
- few lettuce leaves for garnish
DIRECTIONS
- In pot bring broth, cous cous, lemon juice, olive oil, salt and pepper to boil then remove and cover for 5 minutes.
- Stir and fluff.
- Add mint, tomatoes and cucumbers and stir.
- Use tomato and lettuce for garnish.
