Couscous

INGREDIENTS
  • 1 1/4 cup vegetable broth
  • 1 cup couscous
  • 2 TBSP lemon juice
  • 3 TBSP olive oil
  • salt and pepper to taste
  • bunch of mint chopped
  • 2 tomatoes - one tomato diced and the other sliced for garnish
  • 1 cucumber diced
  • few lettuce leaves for garnish
DIRECTIONS
  1. In pot bring broth, cous cous, lemon juice, olive oil, salt and pepper to boil then remove and cover for 5 minutes.
  2. Stir and fluff.
  3. Add mint, tomatoes and cucumbers and stir.
  4. Use tomato and lettuce for garnish.
RECIPE BACKSTORY
Couscous is primarily a staple for Northern African countries. It was first spotted in an North African cookbook in the 13th century. Couscous is known as the national dish for Northern Africa.
