Cousin Pam's Broccoli Casserole

  • Topping:
  • 1 1/2 cups Cheese-its crackers, coarsely crushed
  • 1/4 cup grated Parmesan cheese
  • Filling:
  • 3 pounds broccoli crowns, trimmed and cut into 1-inch florets (about 12 cups)
  • 1 cup chopped onions
  • 1 cup mayonnaise
  • 3 Tablespoons lemon juice
  • 1 can mushroom soup
  • 2 eggs
  • 1 1/2 cups Cheddar cheese
  • salt and pepper
  1. Combine all ingredients except Ritz crackers The Parmesan cheese in a large bowl. Mix well. Spoon into 13x9 inch pan. Cover with foil and bake at 350°F for 50 minutes.
  2. Remove foil and sprinkle crushed Ritz crackers & Parm cheese on top of casserole.
  3. Bake, uncovered, for an additional 10 minutes or until crackers are golden brown. Let sit for 10 minutes before serving.
