Cowboy Grub (casserole)
INGREDIENTS
  • Cooking Time: 12 mins
  • Preparation Time: 3 mins
  • 1 lb eye of round beef roast or steaks, cut in 1/4 inch cubes
  • 1 lb quick cooking shredded hash browns
  • 1/2 cup chopped onion or frozen chopped onion for easier use
  • 1/2 c brown sugar barbecue sauce
DIRECTIONS
  1. Spray a large non stick skillet with non fat cooking spray
  2. Turn the heat on medium high
  3. Place the meat on the bottom of the pan, cover and cook for 3 to 4 minutes or until brown on the bottom
  4. Turn the meat over and top with shredded has browns and onion
  5. Cover and cook 3 to 4 mins or until the meat is no longer pink.
  6. Stir the entire dish. Cover and cook an additional 3 to 4 mins, stirring occasionally
  7. Turn the heat down to low. Add the barbecue sauce. Gently stir until well mixed
  8. Serve immediately
  9. *Note you may substitue pork tenderloin for the beef
