Cracker Candy aka Christmas Crack
  • about 40 saltine crackers (about one sleeve, enough to line your tray)
  • 1 cup + 2 T firmly packed brown sugar
  • 1 cup butter
  • 12 ounces chocolate chips
  • 1/2 - 3/4 cup toasted chopped pecans
  1. Preheat the oven to 350F. Line cookie sheet with foil and spray with non-stick cooking spray. Line the saltine crackers in a single layer on the bottom, breaking crackers if necessary.
  2. In a saucepan, melt butter on low heat. Once melted, add brown sugar and turn heat to medium. Continue stirring until boiling then boil for 3 minutes. Pour over crackers, spread evenly working quickly.
  3. Put sheet into oven-bake 5 minutes. Remove, pour chocolate chips over top - place a sheet of foil over and let melt for 3 minutes. Spread melted chocolate over the top evenly. Add nuts to top - replace foil and refrigerate until set.
