Cranberry ALmond Banana Bread
  • 3 over ripe bananas
  • 1 cup sugar
  • 1/2 cup oil
  • 1 egg
  • Beat all ingredients together. Stir in:
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 c. flour
  • 1/2 c. chopped nuts (for traditional bread, use walnuts)
  1. For additional flavor I subbed almonds for the walnuts and tossed in 1/2 cup dried cranberries and 1 tsp cinnamon. You can also use Splenda in place of the sugar and it works well!
  2. Bake at 350 for 45 minutes or until knife comes out clean.
This is my mother's famous banana bread recipe with a few additions. It is the most moist and soft banana bread recipe I've ever used!
