Cranberry Cake
INGREDIENTS
  • Cooking Time: 1 hour at 350F
  • 1/2 cup soft butter
  • 1 cup sugar
  • 2 eggs
  • 2 cup self-rising flour
  • 1 (8 oz) sour cream
  • 1 tsp almond extract
  • 1 (16 oz can) whole berry cranberry sauce
  • 1/2 cup chopped pecans
DIRECTIONS
  1. Preheat oven to 350F
  2. Grease and flour 10" tube pan
  3. Cream butter and sugar
  4. Add eggs and beat well
  5. Add flour alternately with sour cream, mixing well each time
  6. Add almond extract
  7. Pour 1/3 of the batter into the pan
  8. Spread 1/2 can of cranberry sauce over the batter
  9. pour 1/3 of batter over the sauce
  10. reserve 3 tablespoons of the cranberry sauce and the rest over the batter
  11. Finish by pouring the remaining batter into the pan evenly
  12. Sprinkle the top with pecans
  13. bake for 1 hour at 350F
  14. For Glaze:
  15. Mix 3/4 cup powdered sugar with reserved cranberry sauce.
  16. Pour over the cake wile still warm
