Cranberry Coconut Drops
INGREDIENTS
- 1 cup butter
- 1 cup light brown sugar
- 1 cup white sugar
- 2 eggs
- 1 1/2 tsp. vanilla
- 2 1/4 cup flour
- 1 1/2 tsp. baking powder
- 1 cup dried cranberries plumped and drained
- 1 1/2 cup coconut
- 1 1/2 cup nuts
DIRECTIONS
- Plump cranberries in boiling water; drain and set aside. Mix together the butter, sugar, eggs and vanilla. Add the flour and baking powder.
- Stir in the cranberries, coconut and nuts. Drop by spoonfuls onto greased baking sheets. Bake for 14 minutes.
