Cranberry Coconut Drops

  • 1 cup butter
  • 1 cup light brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 1/2 tsp. vanilla
  • 2 1/4 cup flour
  • 1 1/2 tsp. baking powder
  • 1 cup dried cranberries plumped and drained
  • 1 1/2 cup coconut
  • 1 1/2 cup nuts
DIRECTIONS
  1. Plump cranberries in boiling water; drain and set aside. Mix together the butter, sugar, eggs and vanilla. Add the flour and baking powder.
  2. Stir in the cranberries, coconut and nuts. Drop by spoonfuls onto greased baking sheets. Bake for 14 minutes.
