Cranberry Nut Bread

- Servings: Makes 1 loaf
- 2 c flour
- 1 c sugar
- 1 1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 3/4 c orange juice
- 2 tbsp vegetable oil
- 1 tbsp grated orange peel
- 1 egg, well beaten
- 1 1/2 c fresh or frozen cranberries, coarsely chopped
- 1/2 c chopped nuts
DIRECTIONS
- Preheat oven to 350F. Grease a 9x5 in loaf pan. Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, oil, orange peel and egg. Mix until well blended. Stir in cranberries and nuts. Spread evenly in loaf pan. Bake for 55 min or until a toothpick inserted in the cneter comes out clean. Cool on rack for 15 min. Remove from pan; cool completely.
