Cranberry Orange Almond Quick Bread

  • 3 cups all-purpose flour
  • 3 Tbsp sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1 cup dried cranberries
  • 1/2 cup sliced almonds, toasted
  • 1 large egg, room temperature
  • 1 cup fat-free milk
  • 1/3 cup canola oil
  • 3/4 tsp grated orange zest
  • 3/4 tsp almond extract
DIRECTIONS
  1. Preheat oven to 350.
  2. Toast almonds on the stove just until fragrant.
  3. Whisk together flour, sugar, baking powder, and salt.
  4. Stir in cranberries and almonds.
  5. In a separate bowl, whisk together egg, milk, oil, zest and extract.
  6. Add to flour mixture and stir just until moistened.
  7. Transfer to a greased 9x5 loaf pan.
  8. Bake for 40-50 minutes or until a toothpick comes out clean.
