Cranberry Orange Almond Quick Bread

- 3 cups all-purpose flour
- 3 Tbsp sugar
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1 cup dried cranberries
- 1/2 cup sliced almonds, toasted
- 1 large egg, room temperature
- 1 cup fat-free milk
- 1/3 cup canola oil
- 3/4 tsp grated orange zest
- 3/4 tsp almond extract
DIRECTIONS
- Preheat oven to 350.
- Toast almonds on the stove just until fragrant.
- Whisk together flour, sugar, baking powder, and salt.
- Stir in cranberries and almonds.
- In a separate bowl, whisk together egg, milk, oil, zest and extract.
- Add to flour mixture and stir just until moistened.
- Transfer to a greased 9x5 loaf pan.
- Bake for 40-50 minutes or until a toothpick comes out clean.
