Cranberry Orange Relish
  • 1 package (12 oz.) cranberries
  • 1/2 cup sugar
  • 1-1/2 cups boiling water
  • 1 package (8-serving size) cranberry flavored gelatin mix
  • 1/2 tsp. cinnamon
  • 1-1/2 cups cold water
  • 1 can (11 oz.) mandarin orange segments, drained
  • 1/2 cup chopped walnuts, toasted (optional)
  1. Chop cranberries fine in a food processor. Mix with sugar and set aside. Stir boiling water into gelatin mix and cinnamon in a large bowl for 2 minutes or until gelatin has completely dissolved. Stir in cold water. Refrigerate 1-1/4 hours or until thickened. Stir in cranberries, orange segments and nuts. Spoon into a 6-cup mold or a 2-quart bowl sprayed with a no stick cooking spray. Refrigerate 4 hours or until firm. Unmold and garnish as desired
