Cranberry-Walnut Fruit Salad
INGREDIENTS
- Servings: 6-8
- Preparation Time: 30 minutes
- 8-oz bag whole cranberries, chopped in blender or food processor into medium-fine pieces
- 1/2 cup Dried cherries, raisins or Craisins
- 8-oz can crushed pineapple or pineapple tidbits, drained
- 2 small oranges, cut into small pieces
- 1 sweet apple, diced (any variety: Red Delicious, Gala, Honey-crisp, Fuji)
- 1/2 cup walnuts or pecans, chopped
- (opt) A sprinkling of all-spice or cloves (to taste, a little goes a long way!)
- up to 1 Tbsp agave or honey (add, as needed, for sweetness)
DIRECTIONS
- Mix first 4 ingredients in a large bowl. Add cut apples and mix (orange and pineapple will keep apples from browning). Taste for sweetness.
- If desired, add spice. Add honey or agave if more sweetness is desired. Mix. Serve chilled.
RECIPE BACKSTORY
This fruit salad has a good balance of sweet and tart fruits, so needs little added sweetener. As our family has become more health-conscious over the years, I am grateful for recipes like this one that provide alternatives to sugar-laden cranberry sauce and complement sweet meats so well.
