Cranberry-Walnut Morning Cake
  • Cream together: 1 stick butter, 1 cup sugar, 2 eggs.
  • Blend together: 1 tsp baking powder, 1 tsp soda, 2 cups flour, 1/2 tsp salt.
  • 1/2 pint sour cream
  • 1 tsp almond extract
  • 1 large can cranberry sauce (whole berry)
  • 1 cup chopped walnuts
  1. Cream first three ingredients. Stir in flour mixture to cream mixture, alternating wit sour cream. Fold in extract and nuts. Pour half the batter into a greased tube pan. Spread half can of cranberry sauce on top of batter. Pour in rest of batter, top with remaining cranberry sauce. Bake at 350 for 50-60 minutes. Allow to cool before removing from the pan.
  2. Topping - Mix together ¾ cups of confectionery sugar, ½ tsp almond extract, and add enough warm water so you can drizzle onto warm cake with spoon.
