Cranberry Yam Bread

INGREDIENTS
  • 2 large eggs, slightly beaten
  • 1 1/3 cup sugar
  • 1/3 cup canola oil
  • 1 cup mashed sweet potatoes (canned or cooked fresh)
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground allspice
  • 1 tsp baking soda
  • 1 cup chopped fresh cranberries
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. Coat loaf pan with nonstick cooking spray and dust with flour.
  3. In a large bowl, combine eggs, sugar, oil, yams and vanilla.
  4. In a separate bowl, combine flour, cinnamon, allspice and baking soda.
  5. Make a well in the center and pour in yam mixture. Mix until well moistened.
  6. Stir in cranberries.
  7. Spoon into loaf pan.
  8. Bake for 1 hour or until toothpick inserted in center comes out clean.
  9. Let cool completely.
  10. Serve with soft cream cheese spread or butter.
