Crantini Cupcakes for Iron Cupcake Earth
  • Cooking Time: 20
  • Servings: 3 dozen.
  • Preparation Time: 10
  • Cran-Vanilla Cupcakes
  • 1 1/2 cups self-rising flour
  • 1 1/4 cup all-purpose flour
  • 1 cup butter, softened
  • 1 1/2 cups sugar
  • 1/2 cup superfine {berry} sugar
  • 4 Large eggs
  • 1 cup Vanilla Yogurt
  • 2 tsp. Vanilla extract
  • 1 1/2 cups fresh cranberries
  • Zest of 1 large lime
  1. Preheat oven to 350 F. Line muffin tins with cupcake papers.
  2. In a small bowl, combine the flours and set aside.
  3. In a large mixing bowl ( with a stand mixer preferably) cream the butter until
  4. smooth. Add the sugar gradually and beat until fluffy for 3 minutes (I would
  5. suggest timing this as it does make a difference, you want the butter to be
  6. light and airy). Then add the eggs, one at a time, beating well after each
  7. addition.
  8. Add the dry ingredients alternating with the yogurt and vanilla. With each
  9. addition, beat until the ingredients are incorporated but make sure to not
  10. overbeat. Using a rubber spatula, scrape down the batter in the bowl to
  11. make sure the ingredients are well blended.
  12. Using a spatula or wooden spoon, fold in the cranberries and lime zest until
  13. just mixed.
  14. Spoon the batter into the cupcake liners, about 1/4 cup, filling them about
  15. 3/4 full. I had to use my large wilton muffin pan, and two smaller ones to
  16. make all the cupcakes!
  17. Bake about 20-25 minutes, or until a toothpick inserted into the center
  18. comes out clean. You should always start with the lesser time, and then add
  19. more if need be.
  20. Once they are baked, let them cool in the muffin tins for about 10 minutes,
  21. and then lift them to cool completely onto cooling racks. You can frost them
  22. with the vodka buttercream, or if you want to use regular icing you can also
  23. brush the tops of the cupcakes once cooled with vodka to soak in!
This is a recipe I came up with for the Iron Cupcake Earth Challenge: Cranberry. It is a take on a popular martini, the crantini! It is made with a vanilla cranberry cupcake topped with a lime-vodka frosting!
