Cream Cheese Mints

INGREDIENTS
  • Servings: 4-8 doz
  • 1 3-ounce package cream cheese, softened
  • 1/2 teaspoon peppermint extract
  • 3 cups sifted powdered sugar
  • Few drops food coloring
  • Granulated sugar
DIRECTIONS
  1. In a small mixer, combine softened cream cheese and peppermint extract. Gradually beat in powdered sugar with an electric mixer till mixture is smooth. (Knead in the last of the powdered sugar with your hands).
  2. Knead in food coloring until evenly distributed.
  3. Sprinkle small candy molds lightly with granulated sugar. Press about 1/2 to 3/4 teaspoons mixture into each mold. Remove from mold.
  4. OR, form mixture into 3/4 inch balls. Dip each ball in granulated sugar; place on waxed paper. Flatten each with the bottom of a juice glass or with the tines of a fork.
  5. Let dry overnight, turn once to speed drying process.
  6. Makes 6-8 dozen molded mints or about 4 dozen patties
RECIPE BACKSTORY
I've had this recipe a long time and really don't remember where I found it. I usually make these around Thanksgiving or Christmas time. They're wonderful to have on hand in a candy dish for a quick sweet treat or to offer a guest.
