Cream Wafers
  • Servings: 5 doz
  • 1 c. soft butter
  • 1/3 c. whipping cream
  • 2 c. a.p. flour
  • granulated sugar
  • Filling:
  1. Mix thoroughly butter, cream and flour.
  2. Cover and chill.
  3. Heat oven to 375 degrees.
  4. Roll about 1/3 of dough at a time 1/8 inch thick on floured cloth-covered board. (Keep remaining dough chilled)
  5. Cut into 1-1/2 inch rounds.
  6. Transfer rounds with a spatula to piece of waxed paper that is heavily covered with sugar; turn each round so that both sides are coated with sugar.
  7. Place on ungreased baking sheet.
  8. Prick rounds with fork about 4 times.
  9. Bake 7 to 9 minutes or until just set, but not brown.
  10. Cool.
  11. Filling:
  12. Cream butter and confectioners sugar with Vanilla until smoot and fluffy.
  13. Tint with a few drops of food coloring.
  14. Add few drops of water if necessary for proper consistency.
  15. Put cookies together in pairs with Creamy Filling.
