Cream of broccoli Soup

  • 1 tbsp butter
  • 3 cloves garlic minced
  • 2 carrots finely diced
  • 2 celery finely diced
  • 1 onion diced
  • 1/2 teaspoon dried rosemary
  • 2 cups chicken stock
  • 2 potatoes cut into small cubes
  • 2 tomatoes, chopped
  • 2 tbsp tomato paste
  • 2 1/2 cups milk
  • 1 cup broccoli chopped
  • pepper to taste
DIRECTIONS
  1. Melt butter in a large pot.
  2. add garlic, onions, celery, carrots and rosemary until onions are softened
  3. Add stock and potatoes.Bring to a boil.
  4. Lower heat to medium and cook with lid on for about 8 minutes to cook potatoes, stirring often.
  5. Add tomatoes and tomato paste mix well.
  6. Cook, covered, for 5 minutes. stir milk gradually into the pot (make sure heat is at medium).
  7. Add broccoli. Cook for 5 minutes.
  8. Add pepper to taste.
