Creamed Potato Casserole with Chives and Bacon
  • 6 large baking potatoes, scrubbed. Cut into 1/4" thick slices, do not peel
  • 2 onions, chopped
  • 6 t. butter, melted
  • 1 cup sour cream
  • 1/2 cup chopped chives
  • 6 slices bacon, cooked crisp, drained and crumbled
  • Salt and pepper to taste
  1. In a 9 x 13" pan, toss together potatoes, onions and butter until well mixed. Bake in a 350 oven for about 45 minutes, or until potatoes are tender. Toss and turn once or twice. Combine sour cream, chives, and bacon and stir into potato mixture. Cook for another 5 minutes to heat through. do not overcook at this point. Season to taste. Serves 6
  2. Note: Potatoes can be held after baking. Before serving, heat them in a 350 oven and then stir in the sour cream mixture and heat through
