Creamy Cajun Chicken Pasta

- 2 tsp smoked paprika
- 1 tsp oregano
- 1 tsp thyme
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper
- 1/4 tsp black pepper
- 1/4 tsp salt
- CHICKEN PASTA INGREDIENTS
- 1 Tbsp olive oil
- 1 Tbsp butter
- 1 lb. boneless, skinless chicken breast
- 1 yellow onion, diced
- 1/2 lb. penne pasta (uncooked)
- 15 oz. fire roasted diced tomatoes
- 2 cups chicken broth
- 2 oz. cream cheese
- 3 green onions, sliced
DIRECTIONS
- Combine Cajun seasonings in a small bowl and pour over cubed chicken (1/2 to 3/4-inch), stir until coated.
- Heat olive oil and butter to a large deep skillet over medium-high until very hot and butter is melted. Add chicken and cook for a couple minutes on each side, or just browning.
- Add onion and continue to sauté for about 2 minutes more, or until soft and browning.
- Add pasta, tomatoes (with juice), and chicken broth; stir until mixed and cover.
- Bring to a boil then lower to medium-low and simmer approx. 10 ten minutes, stirring occasionally to prevent pasta from sticking.
- When pasta is tender and liquid is reduced to a thick sauce, add cream cheese, stir until melted.
- Top with sliced green onions and serve.
