Creamy Cauliflower "Mock" Mashed Potatoes

- 1 head of cauliflower, stem removed and cut into florets
- 1 tbsp. of coconut oil
- 1 tbsp. of minced garlic
- Sea salt and pepper to taste
- Parsley and/or chives for garnish (optional)
DIRECTIONS
- Boil or steam the cauliflower for 10 minutes
- Drain and place into food processor or blender
- Add in the coconut oil and garlic
- Blend untll smooth
- Garnish with parsley and/or chives if desired
