Creamy Cauliflower "Mock" Mashed Potatoes

  • 1 head of cauliflower, stem removed and cut into florets
  • 1 tbsp. of coconut oil
  • 1 tbsp. of minced garlic
  • Sea salt and pepper to taste
  • Parsley and/or chives for garnish (optional)
  1. Boil or steam the cauliflower for 10 minutes
  2. Drain and place into food processor or blender
  3. Add in the coconut oil and garlic
  4. Blend untll smooth
  5. Garnish with parsley and/or chives if desired
This recipe was shared with me from a coworker a few years ago. It's a pretty common recipe that I like to share because of how easy and healthy it is.
