Creamy Cheese & Rice
  • 2 cups cooked rice
  • 1 cup milk
  • 1 can condensed broccoli cheese soup
  • 1/2 cup shredded cheese, plus more to top
  • 1/2 tsp paprika
  • fresh ground black pepper
  1. Prepare rice according to package directions. Combine cooked rice, milk, soup, cheese, onion salt and paprika in a saucepan. Stir well. Cook over medium heat, stirring frequently, until cheese has melted and mixture reaches desired consistency. Top with fresh ground black pepper and additional shredded or crumbled cheddar cheese.
I made this dish on a whim on day. Though I prefer brown rice, you could easily swap for white or a wild rice blend based on your tastes. This is very similar to a packaged dinner you could buy at the store, but tastes so much better.
