Creamy Chicken and Wild Rice Soup
  • 1 C uncooked wild rice cooked using directions on box
  • 1 1/2 C carrots, diced
  • 1/2 onion, diced
  • 1 C celery, diced
  • 4 Tbsp butter
  • 1/4 C flour
  • 1 C half & half
  • 3-4 C chicken broth
  • 3 chicken breasts cooked and diced
  1. Prepare wild rice. Sautee onions, carrots and celery in a large stockpot in 2 Tbsp butter until vegetables have soften slightly. Remove vegetables from pot and set aside. Add remaining 2 Tbsp butter and sift in flour stirring continuously for about 30 seconds. Slowly add chicken broth, blending well so no lumps form. Add wild rice, vegetables and chicken and heat thoroughly. serve
This is a family favorite in our house, and is great for using leftover chicken/turkey and wild rice.
