Creamy Coleslaw
  • Servings: 4-6
  • Preparation Time: 10-15 minutes
  • 1/2 head of green and red (if desired) cabbage, cut into very fine shreds plus 1/2 c. carrots, shredded (or use coleslaw mix from the grocery)
  • 1/2 c. mayo
  • 1-3 t. sugar
  • 1/2 t. freshly ground sea salt
  • 1 t. lemon juice
  • 1 t. celery seeds
  • 1 T. sweet pickle juice (from a jar of sweet pickles)
  1. In a large bowl mix together mayo, lemon juice, sugar, salt, celery seeds, and pickle juice. Mix until creamy. Add cabbage mixture and stir well. Refrigerate until serving.
Some meals just need coleslaw, such as fried fish, BBQ beef ribs, and pulled pork sandwiches.
