Creamy Pea Salad
INGREDIENTS
  • 1 pkg (16 oz) frozen petite peas
  • 3 hard-boiled eggs
  • 1/4 cup light mayo
  • 1/4 cup sour cream
  • 1/2 cup chopped celery
  • 1/3 cup chopped sweet onion
  • 1/8 tsp salt
  • dash pepper
DIRECTIONS
  1. Cook frozen peas as directed on package.
  2. Drain and cool.
  3. Mix celery, onion, salt, pepper, mayo and sour cream thoroughly in a small bowl.
  4. Place peas in a medium bowl.
  5. Slowly add creamed mixture to peas until the peas are covered to taste.
  6. Cover and refrigerate one hour.
