Creamy Rice, Chicken and Spinach Dinner

  • 1/4 cup Kraft Roasted Red Pepper Italian w/ Parmesan dressing
  • 1 lb. boneless skinless chicken breasts, cut into strips
  • 1 1/2 cups fat-free chicken broth
  • 2 cups Minute brown rice, uncooked
  • 4 oz. 1/3 less fat cream cheese
  • 8oz. baby spinach
  • 1 tomato chopped (about 1 cup)
  • 2 tbsp. grated parmesan cheese
  1. Heat dressing in a large skillet on medium-high heat.
  2. Add chicken; cook 3 min.
  3. Add broth; bring to a boil.
  4. Stir in rice; return to boil.
  5. Cover.
  6. Reduce heat to medium; simmer 5 min.
  7. Stir cream cheese into rice mixture until melted.
  8. Add spinach and cover. cook 1 min. or until spinach is wilted.
  9. Stir rice mixture to mix in spinach.
  10. Cover.
  11. Remove from heat; let stand 5 min.
  12. Stir in tomatoes and sprinkle with paremesan cheese.
  13. *i was never able to find that specific type of Italian dressing so i tried a different kind. any variety of Italian will work!
