Creamy Super Green Soup

INGREDIENTS
  • 8 cups of water
  • 2 vegetable bullion cubes
  • 1 small broccoli in florets chopped
  • 1 bunch kale deveined and chopped
  • 1 bunch spinach chopped
  • 1/2 cabbage shredded
  • 1 large onion chopped
  • 6 garlic cloves minced
  • 1 inch ginger peeled and grated
  • dash of olive oil
  • 14 oz. coconut milk
  • salt and pepper to taste
DIRECTIONS
  1. In pot boil water and add bullions, broccoli, kale, spinach and cabbage and bring to simmer for 20 minutes until soft.
  2. In pan saute onion, garlic and ginger with oil and add to soup. Add salt and pepper to taste.
  3. Add coconut milk and simmer for 5 - 10 minutes.
  4. Blend soup till creamy.
