Crispy Latkes

- 2 Large eggs
- Salt and Pepper
- 2 lbs (3 t0 4) medium russet potatoes, peeled and halved lengthwise
- 2 medium onions, quartered
- 1/2 cup matzo meal
- 8 Tbsp olive oil
DIRECTIONS
- 1. In large bowl, whisk together eggs, 1 tsp salt, and 1/4 tsp pepper.
- 2. In food processor fitted with large grating disk, grate potatoes and onions (or grate on a large hole box grater). Add to bowl with eggs and toss to combine. Add Matzo meal and mix to combine.
- 3. Heat 2 Tbsp olive oil in large skillet on medium. Gentley drop 5 large spoonfuls of potato mixture onto skillet (about a 1/4 cup each). Spread out spoonfuls to create even pancakes and cook until browned. 4 to 6 min per side; transfer to plate.
- 4. Repeat with remaining potato mixture, adding more oil to skillet as needed. (When getting near end of potato mixture strain and discard any liquid at the bottom of the bowl).
