Crispy Red Potatoes
  • 1 1/2 lb red potatoes, washed well and quartered
  • 3 strips bacon, diced
  • 2 cloves of garlic, minced
  • 1-2 Tbsp butter
  1. Put potatoes into a pot with enough water to cover and add kosher salt. Bring to a boil. Meanwhile, saute bacon until crisp and then spoon out keeping grease in your pan. Cook potatoes until fork tender and then drain. Heat grease on medium-high and add 1-2 Tbsp butter. Place drained potatoes into the grease pan. Cook approximately 15 minutes over medium-low. Mince garlic and add to potatoes then add bacon and cook long enough to heat bacon and garlic through.
