Crispy Smashed Potatoes with Rosemary
  • Red potatoes
  • Kosher Salt
  • Rosemary
  • Pepper
  • Olive oil
  1. Wash and boil potatoes until fork tender (can do ahead)
  2. Cool in refrigerator
  3. Line baking sheet with foil and parchment paper
  4. Flatten potatoes onto parchment lined baking sheet - lay towel on potato and use heel of hand to flatten
  5. Liberaly pour olive oil over potatoes and using spatula lift potatoes to let oil get under potatoes
  6. Sprinkle with salt, rosemary and pepper
  7. Bake at 450 for 30-45 minutes turning once
