Crock Pot Asian Ribs with Savory Sweet Potatoes

  • 2 lbs southern style pork ribs
  • 1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 1/4 cup sesame oil
  • 1/4 tablespoon ground ginger
  • 1/4 teaspoon cloves
  • 2 garlic cloves, minced
  • 3 medium sweet potatoes
  1. Place everything but the sweet potatoes in the crockpot and cook on low 7-8 hours.
  2. An hour before you are ready to serve, wash the sweet potatoes and place the potatoes, whole, in a baking dish. Bake, uncovered, for 1 hr at 350 degrees, or until they easily pierce with a fork.
  3. Remove the skins from the potatoes and mash with 1/4 cup of the liquid from the crockpot. Serve ribs over the mashed sweet potatoes.
