Crock Pot Cinnamon Pecans

  • 4 Cups Raw Nuts of Your Choice (I used pecans)
  • 1 Tbsp Coconut Oil
  • 3 Tbsp Honey
  • 1 Tbsp Cinnamon
  • 1 1/2 Tsp Pure Vanilla Extract
  1. Set crock pot on low
  2. Mix all ingredients, except the nuts, in the bottom of the crock pot
  3. Stir in nuts until they are all well coated
  4. Let sit for 1 hour on low
  5. Stir and let sit for another 30 minutes
  6. Repeat until nuts are perfectly roasted, keep an eye on them after 2 hours to make sure they don't burn
  7. Pour onto a silicone baking sheet or parchment paper lined pan and let cool at least 1 hour
  8. Per 1/4 cup serving:
  9. 195 calories 19g fat 7g carbs 3g fiber 2g protein

I used to hate any type of nuts, unless it was peanuts. Of course, I didn't know what I was missing out on until I tried some sugar smothered almonds and pecans! With a healthy diet, sugar needs to be kept at bay and those sugar smother nuts are not the best way to cure a sweet tooth! The Crock Pot Cinnamon Pecans are not only healthy, they are way too easy to make! Set it, forget it, and your house will be smelling amazing in no time!
