Crockpot Morning Casserole
  • 1 bag (32 oz) frozen hash browns
  • 1 lb. bacon diced, cooked & drained or 1 lb. cubed, cooked ham
  • 1 onion diced
  • 1 green pepper diced
  • 1 1/2 C. shredded Cheddar cheese or Monterey Jack cheese
  • 1 dozen eggs
  • 1 C. milk
  • 1 t. salt
  • 1 t. pepper
  1. Place a layer of frozen hash browns on the bottom of the crock pot followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.
  2. Beat the eggs, milk, salt and pepper together. Pour over the crockpot mixture, cover and turn on low. Cook 10-12 hours.
