Crockpot Porcupine Meatballs

INGREDIENTS
  • 1 1/2 lbs lean ground beef
  • 1/2 cup raw rice (long grain)
  • 1/2 cup scallions, chopped
  • 1/2 cup green bell peppers, finely chopped
  • 1 egg
  • 1/4 teaspoon ground pepper
  • 2 (10 3/4 ounce) cans tomato soup
DIRECTIONS
  1. In mixing bowl combine ground beef, rice, scallion, green pepper, pepper.
  2. Shape meat mixture into 24 meatballs, about 1-1/2 inches in diameter.
  3. Place meatballs in crockpot.
  4. Pour soup over meatballs.
  5. Cover and cook on LOW setting for 7-8 hours.
