Crockpot Pumpkin Pie

  • 1 can (15-oz) solid pack pumpkin
  • 1 can (12-oz) evaporated milk
  • 3/4 cup sugar
  • 1/2 cup Bisquick baking mix
  • 2 eggs beaten
  • 2 Tbsp butter or margarine melted
  • 2-1/2 tsp pumpkin pie spice
  • 2 tsp vanilla
  • Whipped topping (optional)
DIRECTIONS
  1. In a large bowl mix together the first eight
  2. ingredients.
  3. Transfer to a crock-pot coated with a non-
  4. stick cooking spray.
  5. Cover and cook on Low for 6 to 7 hours.
  6. (I cooked high 3-4 hours.)
  7. Serve in bowls with a whipped topping if
  8. desired.
