Crockpot Tostado Pie

- 1 olive oil
- 1 onion; chopped
- 1 lb. browned ground beef
- 1 tsp. Mexican seasoning
- 1/2 tsp. salt
- 2 cloves garlic; minced
- 8 oz. tomato sauce
- 4 corn tortillas
- 2 Tbsp. butter; softened
- 1 1/2 cups Monterey Jack cheese; shredded
DIRECTIONS
- Saute onion in oil until golden. Add ground beef, seasonings, tomato sauce. Cover and simmer over low heat for 30 minutes.
- Place a square of foil in bottom of crock pot. Lightly butter one side of tortillas. Lay one tortilla, buttered side up, on
- foil. Spread with layer of meat sauce and layer of cheese. Cover with another tortilla, more meat sauce and cheese.
- Repeat layers ending with cheese.
- Cover and cook on HIGH for 1 hour.
- When ready to serve, lift from crockpot by foil
- corners. Cut into wedges and serve with sour cream and chopped green onions if desired.
- Serves 4-6.
