Crockpot Vegetable Pasta
INGREDIENTS
  • 2 Tbsp Butter
  • 1 Zucchini, Sliced
  • 1 Yellow Squash, Sliced
  • 2 Carrots, Sliced
  • 10 oz Frozen Broccoli
  • 4 Green Onions, Diced
  • 1 Garlic Clove, Minced
  • 1/2 tsp Salt, Black Pepper, And Basil
  • 1 cup Parmesan, Grated
  • 12 oz Angel Hair Pasta
  • 1 cup Mozzarella, Grated
  • 1 cup Cream
  • 2 Egg Yolks
  • (Tomato Sauce Instead Of Cream And Eggs Can Be Substituted)
DIRECTIONS
  1. *Rub crockpot wall with butter; put all ingredients in up to parmesan cheese
  2. *Cook on high 2 hours
  3. *Cook pasta as directed on package and drain
  4. *Add pasta, mozzarella, cream, and egg yolks (or tomato sauce); stir to blend
  5. *Allow to heat 15-30 minutes
  6. *Turn to low and serve with parmesan cheese

  8. *Skipping the cream and egg yolks and using tomato sauce - you can still add the mozzarella cheese to make a cheesier version and ends up being a combination of a cheesy-cream sauce and tomato sauce
