Croquetas de Jamon (Ham Croquettes)
  • 2 cups ground ham steak (I grind it in the food processor)
  • 1 large onion, puréed in the food processor
  • ¼ cup butter
  • 1/3 cup evaporated milk
  • 3 tblsp flour
  • 1 tsp ground pepper
  • 2 eggs, well beaten
  • Bread crumbs
  1. In a large sauce pan, melt the butter and sauté the onions until they are translucent.
  2. Add the ground ham and the pepper and mix well over a medium low flame.
  3. Add the evaporated milk and mix well.
  4. Finally add the flour and mix until it all the flour has been absorbed and it has become a thick dough.
  5. Place the dough in a Tupperware and refrigerate for at least 2-3 hours or overnight.
  6. Once the dough is cold, form dough into finger long croquetas.
  7. Pass the formed pieces through the egg and bread with the bread crumbs.
  8. Repeat the breading process again.
  9. Fry the croquetas in hot vegetable oil until golden colored.
  10. Be careful not to over cook them or they will fall apart in the oil.
