Croquetas de Jamon (Ham Croquettes)
INGREDIENTS
- 2 cups ground ham steak (I grind it in the food processor)
- 1 large onion, puréed in the food processor
- ¼ cup butter
- 1/3 cup evaporated milk
- 3 tblsp flour
- 1 tsp ground pepper
- 2 eggs, well beaten
- Bread crumbs
DIRECTIONS
- In a large sauce pan, melt the butter and sauté the onions until they are translucent.
- Add the ground ham and the pepper and mix well over a medium low flame.
- Add the evaporated milk and mix well.
- Finally add the flour and mix until it all the flour has been absorbed and it has become a thick dough.
- Place the dough in a Tupperware and refrigerate for at least 2-3 hours or overnight.
- Once the dough is cold, form dough into finger long croquetas.
- Pass the formed pieces through the egg and bread with the bread crumbs.
- Repeat the breading process again.
- Fry the croquetas in hot vegetable oil until golden colored.
- Be careful not to over cook them or they will fall apart in the oil.
