Crumb Topped Fish
  • 1 lb. fish fillets, cod, haddock, boston blue, etc.
  • 2 tbsp. dry bread crumbs
  • 1 tbsp. grated Parmesan cheese
  • 1 tsp. basil
  • 1/2 tsp. grated lemon rind
  • pinch pepper
  • 2 tsp. olive oil
  1. Pat fish dry on paper towels; arrange in a single layer (skin side down if fish has skin) on lightly oiled baking sheet.
  2. In a small bowl combine crumbs, Parmesan, basil, lemon rind and pepper.
  3. Top each fillet evenly with bread crumb mixture.
  4. Drizzle each fillet evenly with olive oil.
  5. Bake in a 450 degree oven for 8 minutes, until fish flakes easily with a fork and topping is lightly browned
Nice and different way to eat fish. The crumbs are only on top
