Crusted Irish Potatoes

  • 2 cans whole Irish potatoes (might be called new potatoes)
  • 1/2 sleeve of Ritz-type crackers, crushed fine
  • 1/2 tsp rosemary, crushed
  • 1/2 tsp tarragon
DIRECTIONS
  1. 2 cans whole Irish potatoes (might be called new potatoes)
  2. 1/2 sleeve of Ritz-type crackers, crushed fine
  3. 1/2 tsp rosemary, crushed
  4. 1/2 tsp tarragon
  5. Mix cracker crumbs and spices. Roll potatoes in mixture. Bake at 350ºF for about 20 minutes. You may want to turn on the broiler for a few minutes to brown the potatoes.
  6. Serves 4 - 6
