Cubano Quesadillas
  • 8 Flour Tortillas
  • 1/4 cup Yellow Mustard
  • 4 oz Thinly Sliced Black Forest Ham
  • 8 slices Sandwich-Cut Dill Pickles
  • 4 oz Thinly Sliced Roast Beef
  • 4 oz Thinly Sliced Swiss Cheese
  1. *Prepare outdoor grill for direct grilling on medium and brush 1 side of each tortilla with mustard
  2. *Evenly divide ham, pickles, beef, and cheese on 4 tortillas and top with remaining tortillas, pressing firmly
  3. *With large metal spatula, place quesadillas on hot grill and cook 2 to 3 minutes or until tortillas on both sides are browned and Swiss cheese melts, carefully turning over once
  4. *Transfer to large cutting board; let stand 1 minute
  5. *Cut each into 4 wedges and serve

  7. *Can be done on stovetop instead of grill
  8. *If you have some chipotle mayonnaise, it goes well with this along with the mustard
  9. *Tortillas can be substituted with hamburger bun and a great way to get rid of odd-ball leftovers - can use any meats/cheeses...just cover the filled bun with foil and use spatula or pan to press down as on stove
