Cucumber Cream Cheese Appetizer

- 2 large organic seedless cucumbers
- 8-ounces flavored cream cheese (use your favorite GF, Vegetarian, Vegan or Paleo cream cheese)
- Sun-dried tomatoes
- Fresh thyme
DIRECTIONS
- 1.) Thoroughly rinse and dry a cucumber
- 2.) Cut off the tips of both ends, discard.
- 3.) Using a vegetable peeler, alternate shaving strips down the entire length of the cucumber while leaving strips of the cucumber peel intact.
- 4.) Cut the cucumber into approximately 1 1/2-inch segments.
- 5.) Top each cucumber segment with a dollop of flavored cream cheese and a sun-dried tomato.
- 6.) Garnish with a sprig of fresh thyme.
- 7.) Refrigerate until ready to serve.
