Cucumber Cream Cheese Appetizer

  • 2 large organic seedless cucumbers
  • 8-ounces flavored cream cheese (use your favorite GF, Vegetarian, Vegan or Paleo cream cheese)
  • Sun-dried tomatoes
  • Fresh thyme
  1. 1.) Thoroughly rinse and dry a cucumber
  2. 2.) Cut off the tips of both ends, discard.
  3. 3.) Using a vegetable peeler, alternate shaving strips down the entire length of the cucumber while leaving strips of the cucumber peel intact.
  4. 4.) Cut the cucumber into approximately 1 1/2-inch segments.
  5. 5.) Top each cucumber segment with a dollop of flavored cream cheese and a sun-dried tomato.
  6. 6.) Garnish with a sprig of fresh thyme.
  7. 7.) Refrigerate until ready to serve.
