Cucumber Feta Dip
  • Servings: 14
  • 1 cup Plain Greek Yogurt
  • 1 large Garlic Clove, Minced
  • 6 oz Feta Cheese, Crumbled
  • 3 English Cucumber, Peeled, Chopped
  • 1 1/2 tsp Lemon Juice
  • 2 tsp Dill Weed
  • Salt
  • 3 Mint Leaves, Finely Chopped
  1. *Place chopped up cucumber in wire mesh strainer and give them a little shower of salt (yes, it sounds like a lot, but it works)
  2. *Mix everything around so the cucumber gets well coated with the salt (this gets the excess water out so your foods will stick to the dip...crazy, but it works)
  3. *Let the cucumbers sit and drain...leave them for at least 30-40 minutes for best results
  4. *Rinse the cucumber off thoroughly with cold water (gets all that salt outta there)
  5. *Spread the cucumber pieces out on a paper towel or clean dishrag and roll it up and squeeze and squeeze until you can't take it anymore and your hands are going to fall off...ok maybe not that much, but squeeze as best you can (and over the mesh strainer to catch any that fall out)...this works best if you use those cheesecloth socks that are used for the grains/hops when brewing beer and you can just use tongs to squeeze out the water and the cucumbers don't stick to that as much as the towels
  6. *Place yogurt in bowl and add minced garlic
  7. *Add feta cheese and chopped up mint - then the cucumbers
  8. *Add lemon juice and dill weed and mix well
  9. *Adjust flavors as desired
  10. *Serve with pita chips and assorted vegetables
  11. Recipe Tips:
  12. *You actually can get away without squeezing with towel or rag and just follow the rest, it is a little more watery, but not a problem in any way

"Everyone is sick of my cucumber dip story, but for the few that don't know it... I am obsessed with it and Simply Naked Pita chips. Every time I find a dip that I like, the stores stop carrying it. I had found some to modify by adding more cucumber and feta, but then the base dip was gone as well. I had to find a recipe that worked. After much adding this and that and Pops telling me yay or nay, this is it.
