Cucumber Noodles
INGREDIENTS

- 3 English cucumbers
- 2 tablespoons butter
- 2 tablespoons minced mint
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon lemon zest
- 1 teaspoon lemon juice
DIRECTIONS
- Cut cucumbers into 1/8 inch strips, discarding core; slice strips into 1/8 inch noodles. Blanch in boiling salted water 1 minute; transfer to ice bath for 2 minutes. Drain and pat dry.
- Meanwhile, heat butter until foam subsides; add cucumbers, mint, salt, pepper, lemon zest and lemon juice and toss 1 minute. Serve immediately.
