Cucumber Salad
  • 2-3 large cucumbers, sliced, peeled if you like
  • 1 large red onion, sliced
  • 1/2 C mayo
  • Splash of milk
  • Splash of vinegar
  • salt/pepper to taste.
  1. In sealable container, mix mayo, milk, vinegar, salt and pepper together. Check the taste and if its too tart, add a bit of sugar. The liquid should coat the back of a spoon.
  2. Add cucumbers and onions. Seal with lid and shake well. Refridgerate for a minimum of two hours.
This is my mom's recipe and I love it during the summer! It goes really nice on hot summer days you need to call your taste buds off. Enjoy!
