Curried Chickpea Salad
INGREDIENTS
  • 1/2 c. plain fat-free yogurt
  • 1/2 tsp. group cumin
  • 2 tsp curry powder
  • 1 1/2 tsp olive oil
  • 1 tsp fresh lemon juice
  • 1/2 c. raisins
  • 3/4 c. bell peppers
  • 2 T. cilantro
  • 1 lb. can chickpeas (garbanzo beans)
  • 1/2 plum tomatoes
  • 1 c. shredded carrots
DIRECTIONS
  1. Mix all ingredients above and refrigerate up to an hour before serving.
