Curried Plantains - from the U.S. Virgin Islands

INGREDIENTS
  • 4 ripe plantains
  • 1 cup flour
  • 1 tablespoon curry powder
  • 2 eggs
  • 11/2 cup bread crumbs
  • vegetable shortening or lard for frying
  • salt and pepper to taste
DIRECTIONS
  1. Peel plantains and cut into quarters. Roll in flour seasoned with salt, pepper and curry powder. Dipp in beaten eggs, then bread crumbs. Fry in deep fat until golden brown.
