Curried Plantains - from the U.S. Virgin Islands

INGREDIENTS
- 4 ripe plantains
- 1 cup flour
- 1 tablespoon curry powder
- 2 eggs
- 11/2 cup bread crumbs
- vegetable shortening or lard for frying
- salt and pepper to taste
DIRECTIONS
- Peel plantains and cut into quarters. Roll in flour seasoned with salt, pepper and curry powder. Dipp in beaten eggs, then bread crumbs. Fry in deep fat until golden brown.
