Curry Beans and Wild Rice
INGREDIENTS
- 1 medium onion
- 1 red bell pepper
- 1 - 1 1/2 TBS curry powder
- 1 tsp salt
- olive oil
- 2-3 hand-fulls of wild rice
- 1 can of black beans
DIRECTIONS
- The night before we left for camping, I chopped up the bell pepper and onion. Combined the pepper and onion in a Tupperware container (or a zip lock back would work). Drizzle olive oil over peppers/onion, add curry powder and salt. Mix ingredients and refrigerate until you're ready to go camping.
- At the campsite: boiled a pot of water, added rice and cooked until done. Stir in black beans and remove from heat.
- Allow a pan to heat over the campfire. Once hot, empty entire contents of Tupperware container. Since the veggies already have olive oil, no need to add oil to the pan.
- Once veggies are cooked, stir into pot with rice/beans.
- Serve and enjoy the great outdoors.
