DRIED APRICOT CAKE (1952)
INGREDIENTS
- 1 cup dried apricots
- 2 cups water
- 6 tablespoons of sugar
- 1 3/4 cups sifted cake flour
- 1/2 teaspoon of salt
- 1/2 teaspoon baking soda
- 1 teaspoon of baking powder
- 1/2 cup of shortening
- 1 cup sugar
- 2 egg yolks
- 1 teaspoon vanilla
- 1/4 cup of water
DIRECTIONS
- Simmer first 3 ingredients together 30 min. Mash and measure 1/2 cup pulp.
- Sift flour, salt, soda, and baking powder together 3 times. Cream shortening and sugar until fluffy. Add egg yolks and vanilla; beat throughly. Add dry ingredients alternately with water and pulp in small amounts. Bake in greased cake pan in 350ยบ. oven 45 minutes. Makes 1 (8x8 inch) cake.
