Dad's Stuffed Peppers

  • 4 Green Large Bell Peppers
  • 1 lbs ground beef
  • 2 cans skinned tomotoes (or about 8 tomotoas peeled yourself)- cut into small pieces
  • 1 can corn (yellow or white)
  • 1 small can sliced mushrooms
  • salt and pepper to taste
  • parmesean cheese
DIRECTIONS
  1. Brown the ground beef in a skillet
  2. Cut the tops off of the peppers (like a pumpkin) and clear out all the seeds. Place the peppers in boiling water for about 15 minutes, or until soft.
  3. Mix the corn, mushrooms, tomotaoes and ground beef in a large bowl. Place the 4 peppers in a baking tray and fill them with the mixture of beef. Sprinkle Parmesean cheese on top and warm in the oven until cheese is lightly browned.
