Dark Chocolate Mousse

  • Preparation Time: 10-15 minutes
  • 3 c. heavy whipping cream
  • 2 premium dark chocolate bars 3.5 oz. at least 70% cacao, chopped
  • 1/2 c. sugar
  1. Put chopped chocolate in a bowl with 3/4 c. whipping cream. Microwave for 2 minutes at 50% power. Stir. If necessary, continue microwaving at 30 second intervals at 50% power until chocolate and cream are melted and smooth, set aside to cool. Meanwhile Put 2 1/4 c. whipping cream in a cold bowl of a stand mixer and start beating. When cream begins to thicken, add sugar. Beat on high speed until cream forms stiff peaks. Set aside 1 c. to top dessert. Add 1 c. of whipped cream to cooled chocolate mixture and fold in until combined, then fold chocolate into remaining cream until well combined. Spoon into pretty glasses and refrigerate for at least 2 hours. Top with cream that was set aside and top with chocolate shavings before serving.
